Last time, I must have added a little too much oil, and it spilled out. What is the best, correct amount to add?

According to the owner's manual for my 1982 the oil capacity is 5.28 qts with filter change, and 4.75 qts without. Perhaps adding it gradually whilst checking the dipstick often will help. That's all I got.
