#1) Can anyone tell me the minimum thickness for a rear brake rotor on a 931.It's not stamped on the part like usual.

#2) Can anyone tell me if Bilsteins are adjustable by turning the allen keyed shaft that sticks up thru the strut tower? If so what way would I turn it to slow the rebound ?

I'm pretty sure the billstiens are not adjustable. I beleive that allen key is to help remove them, as the shaft turns with the nut when removing it.

As for the brake rotor question, I have no idea.
