On the track it would slow you down, good for drifting (D1 drift cars all run stretch on very low profiles) This cars for the street so not to worried how quickly I can get to the shops, just that I can enjoy the trip.

Stretched tyres give a more progressive oversteer over stock due to reduced sidewall flex. Probably teaching you to suck eggs here but think of it like this: You push hard in to a corner on stock tyres, the tyres flex under the load. Once that flex limit is reached though you loose traction, this can suddenly happen. With stretched tyres the flex is already taken care of. Grip is lost more gradually. Same princible as very low profile tyres (a 195/45/16 on an 8" rim for example would give the same responce as a 30 profile).
